Welcome! I'd start by cleaning everything out and taking a power washer to as much as you dare. If it is clean it is a lot easier to work on.....
How many miles are on it? See if it has compression or will the motor need to come out?
Like river said the steering wheel looks in good shape and your brake and clutch pads don't have much wear though they could have easily been replaced.

Looks like a very complete project you have found. You even have your glass map cover light still on the dash. Let me know if you are headed down this way to Tri-Cities. We have been spending a lot of time in western Montana so during summer we drive thru Spokane lots.
